Occupational Trade Certificate: Chef
Chef is a comprehensive qualification designed for aspiring culinary professionals. It equips learners with the skills, knowledge, and practical experience required to excel in the culinary industry.

The purpose of this qualification is to prepare a learner to operate as a Chef. A Chef plans, organises, and executes the preparation, cooking, and finishing (presentation, holding, and storing) of food.

A qualified learner will be able to:

  • Understand the principles of food safety and kitchen etiquette
  • Master workplace standards and professional development
  • Gain allergen awareness and efficient kitchen operation skills
  • Learn menu planning and recipe costing
  • Prepare, cook, and finish various food groups

What You’ll Learn

Knowledge Modules (144 credits)

  • Food safety and quality assurance, workplace safety, time & measurement
  • Nutrition and dietary needs, kitchen prep, equipment, and cooking methods
  • Theory of food production, ingredient functions, cost control & allergens

Practical Modules (148 credits)

  • Cooking methods, equipment use, prep techniques, portioning and finishing
  • Time management, storage systems, kitchen workflows and cleaning

Work Experience Modules (270 credits)

  • Hierarchy and structure, procurement, service timing, and workflow execution

Assessments

  • 6 x Written Exams | Minimum 4 x Class Tests
  • Practical Room (75% pass mark), Theory Exams (70% pass mark)
  • Final Assignment: Research on a topic of choice (submit within 6 months after final exam)
